14 - 2 to 3 tbsp water, as needed
15 - Salt, to taste

→ Garnish

16 - 2 tbsp toasted sunflower or pumpkin seeds
17 - 2 tbsp chopped fresh parsley

# Step-by-step Directions:

01 - Preheat the oven to 425°F. Line a baking sheet with parchment paper.
02 - Toss the carrot sticks with olive oil, cumin, smoked paprika, sea salt, and black pepper in a large bowl. Spread them evenly on the prepared baking sheet.
03 - Roast the carrots for 20 to 25 minutes, turning once halfway through, until they are tender and caramelized. Remove from oven and let cool slightly.
04 - In a small bowl, whisk together tahini, lemon juice, maple syrup, minced garlic, and a pinch of salt. Gradually add water while whisking until the drizzle is smooth and pourable.
05 - Arrange mixed salad greens on a platter or individual plates. Top with roasted carrots and sliced red onion. Drizzle generously with tahini-lemon sauce.
06 - Sprinkle pomegranate seeds, toasted sunflower or pumpkin seeds, and chopped parsley over the salad. Serve immediately.

# Expert Advice:

01 -
  • The tahini drizzle is creamy and bright enough that you will want to put it on everything
  • Roasted carrots get sweet and caramelized while the greens stay fresh and crisp
  • It comes together fast but looks impressive on a platter
02 -
  • The tahini sauce thickens up as it sits so keep a spoonful of water handy to thin it right before serving
  • Warm carrots against cool greens is the whole point so do not let the carrots cool completely before assembling
03 -
  • Cut your carrots into similar sizes so they roast evenly instead of having some burnt and some raw
  • Whisk the tahini dressing vigorously for at least 30 seconds to make it silky smooth
