Black Currant Popsicles (Printable)

Tangy, sweet homemade popsicles bursting with bold blackcurrant flavor for a cooling summer treat.

# What You'll Need:

→ Fruit Base

01 - 2 cups blackcurrant juice, unsweetened, fresh or bottled
02 - 1/2 cup granulated sugar
03 - 2 tablespoons fresh lemon juice

→ Optional

04 - 1/4 cup whole blackcurrants, fresh or frozen

# Step-by-step Directions:

01 - In a small saucepan, combine blackcurrant juice and sugar. Warm gently over medium heat, stirring constantly until sugar completely dissolves, approximately 3 to 5 minutes. Do not allow to boil.
02 - Remove from heat and stir in lemon juice. Allow the mixture to cool to room temperature before proceeding.
03 - If using whole blackcurrants, divide them evenly among popsicle molds.
04 - Pour the cooled blackcurrant mixture into the molds, leaving approximately 1/4 inch space at the top for expansion during freezing.
05 - Insert popsicle sticks into each mold and transfer to freezer. Freeze for at least 4 hours or until completely set.
06 - Briefly run the outside of the molds under warm water and gently pull out the popsicles. Serve immediately.

# Expert Advice:

01 -
  • You can make them in under 20 minutes of actual work, which means four hours from inspiration to frozen perfection.
  • The blackcurrant flavor is bold enough to feel indulgent but naturally bright, so they don't taste like eating straight sugar.
  • They're vegan and gluten-free without tasting like a compromise—just genuinely delicious.
02 -
  • If your popsicles crack when you're trying to unmold them, your molds were too cold or you held them under warm water too long; find the middle ground and you'll slide them out cleanly.
  • The lemon juice isn't just flavor—it's a preservative that keeps these tasting fresh in the freezer and prevents that flat, icy taste that happens when fruit popsicles sit too long.
03 -
  • Always use unsweetened blackcurrant juice—the sweetened versions mean you're guessing at sugar content and losing control of the final flavor.
  • If you can't find blackcurrant juice, frozen blackcurrants blended smooth and strained work beautifully, giving you an even fresher result than bottled.
